Which CHEDDAR tastes better!?

extra sharp is too strong and mild is too light. i would have to say medium or sharp cheddar for macaroni and cheese. that is just right and it brings out the taste. i like macaroni with only cheddar and no other cheese but if you want to add another type of cheese i would say mozzarella instead of parmesan. if you buy one block of medium and one block of extra sharp i think that will even out the taste and make it like having two blocks of sharp but i could be wrong. i think two blocks of sharp make the taste like extra sharp so you wouldn't want to do that anyway. if you buy one block of mild and one block of extra sharp i think that will make the taste like having one block of medium but i could also be wrong on that. i guess you'll just have to buy them and try them out.
